3 Ingredient Veggie Dish

This is my new favorite!  I am constantly looking for simple, healthy mains for vegetarians to keep full and happy.  This recipe is so easy to make.  You can triple the batch for a large dinner party and also serve it with meat or fish!

RECIPE:

  • 1 cauliflower head

  • 400g cooked chickpeas

  • 1 sweet potato- peeled

  • smoked paprika
  • olive oil 

Chop it all into similar- sized pieces & add to a mixing bowl.  Sprinkle in 1 tablespoon extra virgin olive oil, 1/2 tablespoon smoked paprika, pinch of salt & pepper. Mix until evenly coated and spread out on baking tray.  20 mins at 180 degrees or until cauliflower starts to brown & sweet potato is soft when tested with a fork.  Leave in longer for a crispier texture. Finish with another dusting of smoked paprika. Serve with steamed kale, green salad, brown rice or quinoa.
